Easy peasy banana bread !

So the weather is dull, grey , wet and cold! What better day to stay home and bake delicious and simple banana bread.
I have made this recipe many times, and is one of my childrens firm favourites. So much in fact that keeping any of this yummy cake for more than a day never happens.
I would rather my children eat a lot of my homebaked banana bread than snacks such as crisps, biscuits and chocolate yet it gives them just as much delight as the factory made foods.


What you will need - 
a mixer if like me your a lazy baker lol
or a wooden spoon and bowl will suffice
measuring spoons and cups
one baking loaf tin ( i use a pink silicone one)

ingredients - 

Wet....
3 and a half very ripe bananas mushed into your bowl to make a gooey thick paste
2 whole eggs beaten in
1 teaspoon vanilla escence
1/2 cup vegetable or sunflower oil
mix all this in well

dry ....
1 teaspoon baking powder
1/2 teaspoon salt
1 cup sugar ( white)
i give this all a very good mix to combine
 finally 1 and 2/3  cups self raising flour

i beat this in quickly and dont overwork or the flour will go too gooey and not rise

pour all of this into your greased baking tin or your silicon mould.
Place high up in the oven at gas mark 4 and bake for 45 minutes or until you can test with a scewer and get back a clean stick.

leave to cool before turning out and slicing.


and when your done it should look like this !Unfortunately this isnt the result of my hard work as my children didnt even let it cool long before devouring with satisfaction.




A moist, light and sweet cake, which can be eaten as is or with a thin layer butter or even hot with a dollop of icecream.
